- For batter -
- 1cup All-purpose flour -
- -1/4th cup Desi ghee
- 1/2 teaspoon Lemon juice
- 2 Ice cubes -
- 1 3/4 cup Chilled water
- 1/4 cup Chilled milk
- For sugar syrup -
- 1/2 cup, sugar
- 1/2 cup water
- For Rabri
- 1/2 lt., Milk
- 1 tbsp sugar
- as required Oil for frying
- As needed Almond - finely chopped
- As required Silver vark
Instructions to make to make Rajasthani-Rajasthani Rabdi Ghevar
- To make syrup add sugar and water in a pan.Cook for3-4 min.or till Syrup becomes 1 string consistency.
- To make rabri,boil milk in a karahi.Cook for 10- 15 min.or till the milk becomes thick.Switch off the gas.
- Take ghee in a bowl,mix it with ice cubes until it becomes light and whitish.(rub it with your hand)
- Add all-purpose flour in batches,mix with hand.
- Add chilled milk and mix.
- Now add water little by little and whisk.To make smooth batter,strain it.
- Add lemon juice and mix.
- Heat oil or ghee in a deep pan.When the oil becomes super hot,pour 1laddle full batter from a height of at least 6 inches.carefully.(in a constant flow)Use small ladle.Repeat this process for 5-6 tlmes to make ane piece of ghevar.
- Fry it from both the sides.Scrap frm the sides and flip over with the help of a knife.
- Take out and keep them in a steel strainer so that extra oil drain out.
- To finish,take one ghevar,pour sugar syrup over it and spread rabri over it.
- Garnish it with some chopped almond and silver vark.
- Your royal sweet of Rajasthan is ready to serve.
